The Whole 30: The End
This week I said adieu to The Whole 30 after four long weeks of clean, healthy eating. While I did a “lite” version of this paleo-inspired program which included some additional vegetables & beans since I was excluding meat, I feel as though I was still able to get a good feel for the program.
Pros:
As with my juice cleanse in 2012, I found that one of the major challenges for me at the beginning of The Whole 30 was to think before eating. That may sound like a simple task, but a lot of snacking & munching throughout the day is habit or boredom or automatic rather than actual hunger.
Since this program excludes certain things I was forced to think about what I put into my body more consciously than I do on a regular basis. And that can’t be anything but good! Really listening to my body and asking the right questions was key – Am I really hungry? What is my body asking for? – I was also forced to plan my meals in advance to ensure I was receiving the necessary nutrients.
{Vegan, gluten-free mac n’ cheese & sautéed garlic vegetables}
Cons:
While I did miss some things {namely sweetener in my morning tea & Diet Coke}, I knew I could survive without them for a month. The real con about this program is that it’s not sustainable. It’s a cleanse and intended to be followed only for a short period of time. Living without alllllll fruits, vegetables, gluten-free grains, beans, and nuts isn’t conceivable if I want to live a full & healthy life.
Physical Benefits:
I already follow a fairly healthy diet, I do most of my own cooking and stay away from synthetic & processed foods, but overall in January I felt even healthier than usual. I woke up easily & was filled with energy, my days were productive and by planning out healthy, protein-rich meals in advance I avoided blood sugar spikes over the course of the day, and – best of all – I slept exceptionally well most nights.
Biggest Benefit:
I spent a great deal of 2012 in the kitchen but I have to admit that I was mostly baking. This month I tried more new recipes than I can remember trying all of last year! I made stew, paella, sautées, stir frys, mac n’ cheese, BBQ Baked Beans, and a couple other tasty new dishes. It was fun to put some real effort into being creative in the kitchen and I really hope to continue with that now that the challenge is over.
Have you ever tried a clean eating program like The Whole 30? What were the worst & best parts?
If you’d like to read about my entire experience with The Whole 30 you can catch up at the following links: The Whole 30: Preparing + Week One, The Whole 30: Week Two, The Whole 30: Week Three & The Whole 30: Week Four.
The Whole 30: Week Four
In this, the fourth and final full week of The Whole 30 challenge, I started to realize just how great I’m feeling. While this clean eating plan isn’t terribly far off from my usual way of eating, it excludes the few synthetic, processed & sweet things that I usually consume. Mostly Diet Coke on weekends, Stevia in my morning green tea, the baked goods that I prepare a few times a month, and the red wine or whiskey I indulge in every once in a while.
And I’m not sure if it’s excluding these things that’s making me feel so much better or just the consistency of my diet lately, but I have been feeling great.
Snacks:
Same old, same old. Fresh veggies, smoothies, and sweet potatoes.
Part of the consistency that I mentioned above is a major reduction in my overall snacking – By consciously filling my meals with substantial amounts of fiber & protein I’m staying full and satiated for longer which means less snacking.
Meals:
My favorite new dish this week was one that I made for brunch last weekend – OhSheGlow’s Maple Baked Lentils w/ Sweet Potatoes. I made a few Whole 30-approved changed and the end result was absolutely delicious. Savory and filling with a hint of sweetness. I was thrilled that I’d made enough for brunch as well as a few mid-week meals for myself.
Thoughts So Far:
While many things about this way of eating seem like smart ideas that should be extended beyond the 30 days – Such as reduced consumption of alcohol, processed foods, synthetics ingredients – I don’t believe that this is a sustainable all-the-time diet. I’m hoping to continue on when it comes to certain aspects, but such an austere eating plan just plain isn’t fun when it comes to eating out or social events.
How I Feel:
As I said above this cleanse is having quite beneficial results for me. I’m sleeping really well, but more than that, I’m even – Emotionally and physically – Through out the day. Part of that is that I’m not going from starving to overly full because I’m planning my meals out in advance, and part of it is that my blood sugar is stable throughout the day so that there are no highs & lows.
Even = GOOD! 🙂

The Whole 30: Week Three
Here we are at Week Three of The Whole 30 Challenge, which could also be called “I can almost taste the coconut squares.” Yes, I’m already planning my first “non-Whole 30” treat. Judge away.
Snacks:
There was some serious sweet potato-age this week! I barely touched them the first two weeks but this week, in addition to craving them, I was also reading about the positive health benefits of potatoes in Kathleen DesMaisons’s Potatoes Not Prozac {book report to come!}. So this week I ended up eating baked potatoes as snacks and even adding chunks of them to my mornings smoothies.
Yum!
Meals:
A friend came over for dinner Tuesday and I was excited to finally try a recipe that I had printed out the week before – Carrie On Vegan’s BBQ Baked Beans. They turned out great as the entree for our little dinner party with sauteed green beans & asparagus and curried cauliflower on the side.
I’m loving cauliflower right now so if you’re like me and just can’t get enough you should check out Holly Would If She Could’s 5 Things To Do With: CAULIFLOWER and get some new inspiration!
Thoughts So Far:
I had the strangest cravings this week! If someone mentioned a food or if I read about a meal or saw food on TV it as immediately the only thing I could think about. Which is especially odd since I don’t even eat most of those things in the first place. My subconscious clearly just doesn’t like being told “no!”
How I Feel:
Fantastic! I’m sleeping really well, I’m waking up easily and without caffeine, I have energy and concentration throughout the day, and I feel really satiated after my meals. And that smugness Holly promised is really starting to kick in… 🙂

The Whole 30: Week Two
Welcome to Week Two of my experience with The Whole 30 – You can read about Week One here.
The main difference for this second week – and the first full week – was the addition of a weekend. During a standard week I have routines and I plan everything out in advance, however I tend to approach my weekends with a much more lackadaisical attitude. There are more social engagements, meals at restaurants, traveling & events, and during the weekends I’m not as regimented with food & fitness. I like to bake, I drink wine, I allow myself treats at the Farmers Market…
Snacks:
Adammame beans, roasted beet chips, baby carrots, and vegetable based smoothies were all on the docket this week. I’m not embarrassed to admit that I was pretty thrilled when I came across the container of ready-to-eat edammame at a health food store in Sacramento.
Meals:
I was still working through my batch of crockpot cauliflower & sweet potato stew this week and I supplemented my meals with coconut oil roasted brussels sprouts, cauliflower & zucchini. The other main dish that I made for this week was a delicious Quinoa Vegetable Paella – I substituted lentils for the quinoa – Feeling really proud of myself – And emphasized the veggies I had on hand.
You know I really enjoy a dish when there isn’t a single picture of it plated – I enjoyed it too much to slow down long enough to take a picture of it!
Thoughts So Far:
I cannot stress enough how important it is to plan ahead and cart snacks/meals around with you – Whether it’s going to the office or traveling over the weekends. During this full week it became apparent how important it was for me to bring healthy, satisfying alternatives into the office for midday consumption – Otherwise I binged on the readily available nuts when the snacking urge hit me.
How I felt:
Despite having similar meals each day how much I ate and how often varied from day-to-day. I was surprised to find that some days I was starving in the mornings, while on others I barely ate until the afternoon. This eating plan is alllll about listening to your body & giving it what it needs!

Whole 30: Preparing + Week One
January 1st marked day one of my adventure with Whole 30 – Inspired by my friend Holly of Holly Would If She Could {check out A December To Remember + A Whole 30 Level Set & January Whole 30? LET’S DO THIS for background on this challenge}.
And while calling three days “week one” might seem presumptuous I must confess that I’m a firm believer in playing up any successes or positive changes towards a healthier life style. Whether it’s a week or a day – you’ve made better choices & improved your health – so celebrate it!
My decision to participate in this challenge isn’t about weight loss but about eating a cleaner diet – Something I wasn’t strict about over the course of the last few months. While I truly believe that you should enjoy food & bubbles with your family and friends during the holidays, I must say that I’m feeling a bit sluggish as January begins.
It’s also a great chance to find some delicious new recipes to add to my repertoire and to meet other like-minded folks who put a lot of time and effort into sustaining a healthy lifestyle. So here are some of my munchies for the last three days and how they’re making me feel.
Snacks:
Raw carrots, celery & sugar snap peas and tempeh jerky {roasted slices of tempeh w/ spices}
Meals:
I made two main dishes on Monday and ate them throughout the week, a plan which worked out perfectly because it ended up being a busy couple of days. I made a variation of my favorite crockpot stew from Carrie On Vegan – The Dependable Slow Cooker & Cauliflower Indian Stew and this seriously delicious Cracklin’ Cauliflower recipe from Peas And Thank You.
Thoughts So Far:
Preparation is KEY. These first few days were all about changing habits and reminding myself to think about my food choices before they went into my mouth. And that is much easier when you have the “right” foods already set up and waiting. When you’re starving, running around trying to find a Whole 30 approved meal isn’t the most fun experience. Not that I would know. 🙂
How I Feel:
Outside of the holiday season I already eat a fairly clean diet – No gluten, no dairy, and little to no processed foods – So I wasn’t expecting a huge change in how I felt. I was pleasantly surprised however to find that I started sleeping more soundly, no middle of the night wake-ups was a nice change!
Have you ever tried a clean eating program like this one? What results did you have?
Stay tuned for Week Two!

Spring 2012 Trends: What You Should Wear
The time has finally come and Spring is upon us and it’s time, ladies and gentlemen, to rearrange your closets so that your warm weather clothes are more easily accessible. Spring and Fall are my favorite, I love the transitioning seasons when it’s slightly warm but still crisp and the skies are bright blue and cloudless. I adore going for walks at night when it’s still light out, going to the Farmer’s Market and making huge, brightly colored salads, and of course, bearing some skin after months of being hiding under layers and layers of fabric.
So what’s on tap for Spring? As usual every magazine and fashion blog has a helpful list of what the New York, London, Milan and Paris collections showed for Spring 2012 – Fashionologie, Vogue, Harper’s Bazaar & Elle to name a few. They go to the runway shows and examine them look by look to determine what the upcoming season will be all about. And this season we have: rounded shoulders, lace, 20’s art deco, ladylike silhouettes, florals, tribal prints, peplum tops & dresses, exaggerated & padded hips, wide belts, minimalism, head-to-toe white, mesh, sporty, cropped tops, bra tops…
Bra tops?
As adorable as these models look, this isn’t a what I would call a real trend for real people. Truth be told, pretty much only Carrie Bradshaw can wear a bra top in public. So my goal here today is to give you some ideas for great Spring dressing that are more suited to our non-Sex In The City day-to-day lives.
Pastels:
Pastels are usually a Spring staple and this year is no different. However, rather than putting together solid candy colored looks, try mixing various soft, sherbet shades together for a colorful but subtle look.
Lindsey Wixson & Frida Gustavsson’s ad for Mulberry highlights the beautiful pastel trend perfectly. Why not try pairing pastel pieces with neutrals or even black for a tasteful work-appropriate look?
See FabSugar’s ideas on how to integrate pastels into your wardrobe in 5 Ways to Wear Spring’s Pretty Pastels or WhoWhatWear’s How They Wear Pastels featuring Sarah Jessica Parker, Hanneli Mustaparta & Lily Collins.
Popping:
You may already be sick of the phrase “pop of color” (right Holly?) but this trend isn’t going anywhere anytime soon…
Why settle for one splash of color when you can have two like Judith Bedard does below? I love that she didn’t try to match her tights and oh-so-French scarf. They’re both beautiful, bright colors, and they’re both utterly different.
This is an ideal style for those – like me – who wear mostly black, since adding a bright scarf, pair of shoes, or purse is incredibly easy. Yet those quick touches immediately update your look, make it fresh and take it to a new level. So what did I do to ensure that I could pop pop pop all Spring long?
I bought myself a new best friend! 🙂
A scarf, hat, bag or piece of jewelry are all great choices for bringing this trend to life. But you can get even more creative and find other ways to flash some color. How about a bright hairpiece or headband? What about throwing on some brilliantly colored nail polish?
Bright Blazers:
Similar to the splash of color trend is the modern style of adding a colorful blazer to your outfit to give it a bit of flash.
Above model Josephine Skriver shows just how to pair a bright blazer with a warmer look – slim pants, booties & long sleeves will all keep the chill away as we wait impatiently for the weather to heat up. Already warm enough to lose the pants in your neck of the woods, you luck duck? Try pairing a brightly colored blazer with shorts for a more Summery look like Liz Cherkasova from Late Afternoon does below. She even mixed multiple trends by adding metallic shorts & accessories as well as a floral printed blouse to her look. Quite the Mix Master!
For more tips on finding the perfect blazer, see Rachel Bilson‘s Spring blazer recommendations or Frugal Fashionista‘s great celebrity-inspired choices featuring fashion stars like Kirstin Dunst, Beyonce and Olivia Palermo.
Prints:
While florals are always a Spring staple, this year you should also invest in some other types of prints as well – from tribal prints to chevron zig zags to typical florals to geometric patterns – there’s something to suit everyone’s style. Whether you want to add a printed bag or belt to a monochromatic look or bravely don head-to-toe print, you should definitely give this trend a try.
Hanne Gaby Odiele & Elisa Nalin were both ahead of the curve and showing off gorgeous prints during the Fall 2012 shows this past month. I like that while they’re both wearing florals their looks couldn’t be more different, they’re both quite creative with their personal styling.
Even if you’re still working up the courage to flaunt the all-over 70’s style print you’ve always admired, you can try something a bit more subtle to work your way closer to your goal.

Left: French Connection Dress - Space Baby Knits $170 @ Bloomingdale's & Right: ASOS Print Dress With Dipped Hem - $65 @ Asos.com
A faint pattern like the two dresses above is a good stepping stone. It gives you a fun pattern to play with but isn’t quite as bold or dramatic as Hanne and Elisa’s looks at the top of this section.
White dresses:
Ashley Madekwe’s crisp Armani Exchange dress is light and summery, she paired it with black sandals and layered jewelry for a fun daytime look. While Natalia Vodianova’s dress shows the other end of the white dress spectrum, something fitted and more formal, with dramatic, nighttime accessories – bold purple heels and a crimson clutch.
Whether you’re planning to attend a garden party or have a hot summer night out on the town in mind a white dress is a great choice to show your tan off to perfection. Try adding colorful accessories to keep it fun during the day, chic black & white in the evening or even try out an all-white look if you’re not prone to spilling things… 🙂
In the mood for some more inspiration, check out the Native Fox’s white & red look on Lookbook.nu.
Shirtdresses:
I love shirtdresses! They always look crisp and fresh, and a little more of a formal feel to them than most sundresses so they’re acceptable in a number of social situations. Versatility is key!

Left: Aqua Shirt Dress - $80, Center: DKNYC Leopard Print Shirt Dress - $120 & Right: Vince Camuto Shirt Dress - $160 (All Bloomingdale's)
A shirtdress can be worn casually during the day with sandals, a floppy hat and a cute tote bag, but it can easily be dressed up at night with heels, a cinched waist and some serious costume jewelry. It’s all about the accessorizing ladies!
If you need a tutorial on this subject head over to The Stylist’s and read their latest series Lessons For A Modern-Day Lady and their most recent piece How To Wear A Shirtdress.
Cropped Pants:
This is one of my favorite looks for Spring, cropped pants are universally flattering and whatever your personal style, there’s the perfect pair for you. From bright colors to basic denim to harem style to classic Jackie O inspired black.
Want to take your crops to a new level? Try them in something textured or an interesting new fabric. Miranda was downtown chic in brown leather Capri pants and a basic denim button down. 10 Day Style Challenge – Part V
I bet that you never thought you’d see this day… It’s my fifth and FINAL post of the Freckles in April 10 Day Style Challenge! If you’d like to learn some background on the challenge or see the photographs and prompts that you’ve missed so far, check them out here: Part I, Part II, Part III & Part IV.
Day 9: Open To Interpretation
This is a slightly different type of prompt that Days 1 through 8, for OTI we were given an image (the one below) and asked to put together an outfit inspired by it.
I took one look and emailed Holly in a panic: “I don’t own anything teal – No clothes OR accessories.” Luckily for me though, you were just supposed to use it as an idea to draw from rather than an outfit to be recreated piece by piece. So I took another look and tried to be more creative in my approach. I realized that what I liked most about the look was the colorblocking aspect. So colorblock I did.

Top - Zara, Navy Sailor Pants - H&M, Cream Aviator Coat - Mango, Bag & Charm Bracelet - Vintage & Slingbacks - BCBGirls
I’m a big dress and skirt girl, especially at work, so I was excited to put together another pants look. One of the biggest impacts of this challenge for me so far as been actually wearing clothes that have been sitting in my closet untouched & unloved for – in some cases – years. I need to do a better job of wearing all of my clothes – Which I actually made part of my February goals.
Day 10: Something That Scares You
This one was suggested by Miss Nemesis toward the end of the last round and I filed it away in my brain box. I think most (if not all) of us have some trend or ensemble we’d love to try if only it didn’t scare us silly. We’ve tried it in the safety of our bedrooms only to turn chicken at the last-minute and change into one of our go-to backup outfits before walking out the door.
I was pleased to read Kayla’s comment about trying new outfits on and then changing your mind and changing your clothes before leaving the house. I’ve done that so many times and I’m thrilled that I’m not the only one who does that! I’m a complete coward when it comes to so many things that I didn’t really know where to start on this one. My number one fear for years and years was wearing color, but I’ve actually managed to embrace them over the last few months. So what did I decide to go out in public in for Day #10 despite my terror?
PUFFS!!!
I live in fear of puffs!
Confused? Understandable, let me explain. Puffy sleeves, draping tops, pointy shoulders, Dolman & batwing sleeves and cowl necks all fill me with childlike terror – basically anything that has extra fabric on top. And the insane part is that not only do I adore them on other people, I’ve even bravely bought a few pieces over the years after overly ambitious stints in dressing rooms. So I pulled a puffy-sleeved two-toned dress out of my closet AND a puffy-sleeved cropped faux leather jacket and headed to work.
While the 10 Day Challenge has ended if you haven’t gotten enough fashion you’re in luck, New York Fashion Week starts Thursday!
10 Day Style Challenge – Part II
Welcome to Part II of Freckles in April‘s 10 Day Challenge: Winter Edition. In an attempt to keep my personal style interesting and steer clear of fashion ruts I’m participating in this fashion challenge. Each day Kayla provides us with a theme for our outfit and we dress accordingly, then share the pictures.
If you’d like to catch up on Day 1 & Day 2 you can see them here.
Day 3: Embrace A Trend
Sometimes it’s easiest to just stay in our own little comfort zone of classics and basics and ignore passing trends. But for tomorrow I want you to pick a trend that intrigues you and go for it. Neon nails? Sure! Faux fur? Heck yes. Red pants? You know I love ’em.
This is such a great prompt, it really makes you face your fears and try something new and unusual. I stood in my closet and spent some time on Style.com weighing the pros and cons of various trends. Would this one be flattering? Am I brave enough to try this? And you know what I decided to go with?
STAR STRUCK!
As much as I’ve adored the Dolce & Gabbana star-studded gowns that have made it to the red carpets lately, the key to making this trend work for me was going to be translating it into a day-to-day, wearable format. Sadly that meant the hotpants were out too. Tragic really.

Tunic - Zara, Cigarette Pants - Juicy, Bag - Express, Jewelry - Vintage, JewelMint & Tiffany's, Scarf - Zara, Flats - Lucky & Blazer - Aqua
Day 4: Channel Someone
For tomorrow I want you to channel someone. Alive or dead, fictional or real, famous or regular Joe – doesn’t matter. The trick here is to keep your outfit from looking costumey. You don’t have to copy them exactly…just try and capture the flavor. Pick something they might wear. Give their hairstyle a go.
When I saw this prompt my brain went into overdrive! Audrey Hepburn. No – Grace Kelly. No – Jackie O. No – Twiggy. No – Someone original, someone no one else will pick. To save my pride I’ll lie about how long that little conversation in my head went on for and just say that it went on for a while.
So where did I end up?
I really wanted to channel a 60’s-era Mod girl but since Twiggy is a bit out of my range size-wise, I went with Jean Shrimpton who not only had some curves, she also had long hair with straight, dramatic bangs.
E Voila!
10 Day Style Challenge
In an effort to shake things up style-wise I decided to participate in Freckles in April‘s 10 Day Challenge, which started on Monday, January 23. I don’t know about you, but I have favorite pieces in my closet and tried-and-true looks that I throw together on a regular basis. Perhaps too frequently… While it’s great to have some go-to looks to save you time in the mornings, sometimes that can mean a style rut or even – gasp – forgetting about great pieces that are smashed in the back of your closet.
The 10 Day Challenge: Winter Edition consisted of Miss Kayla providing a daily prompt for inspiration and the participants using said prompts to choose their look for the following day. Since the majority of my day is spent in the office and I don’t always change before running errands or going out after work, I wanted to include some work looks as well as more casual attire over the course of the 10 days. I’m going to share the looks with you two at a time so that I don’t overwhelm you with pictures of me for the next two weeks.
You’re welcome!
My friend Liz was kind enough to act as photographer over the course of the 10 day period and she’s doing a great job despite my complete and utter hatred of having my picture taken. Hopefully this challenge will be the beginning of me sharing more of my daily fashion looks!
Day 1 : Layer It
I’m starting you off easy! But the biggest perk of doing a winter challenge is that we can wear layers. Layers add depth and complexity to an outfit as well as warmth. It’s a great way to work in pattern or texture and there are a million different ways you can go about it.
What I love about layering is that it gives you a chance to give an outfit depth. As amazing as a fabulous dress or a great suit can look, layers allow you more creativity and a chance to make a look wholly your own.
I wanted my layers look to be colorful and fun so that it got me out of my all black phase, warm enough to survive the day and professional looking so that it would be appropriate for a Monday at the office.

Dress: BCBG, Coat: Zara, Purse: Zara, Gloves: H&M, Tights: Kate Spade, Pumps: Very Volatile, Pashmina: from market in Manila & Sunglasses: Christian Dior
Day 2 : Monochrome
There is just something about a monochromatic outfit that feels so wonderfully organized and clean to me. Last time I went safe with blue..we’ll see if I can be a little bolder this time!
I agree with Kayla’s comment above, the first word that I would use to describe most monochromatic looks would be “clean.” And who better to take as my inspiration than the King of Clean himself – Michael Kors?
I’m not going to lie, it took ever fiber of self-control that I have not to wear all black for my monochromatic look. Its safe. Its slimming. Oh, and I have any entire closet full of it… But, it’s also my go-to and the point of this little exercise is to mix things up.
I was surprised by how well the various shades of grey worked together – the tights and booties ended up complimenting the dress even better than I’d hoped. No, I’ll never be Zoe, but I can emulate her style! Imitation is the sincerest form of flattery, right?
Stay tuned for the next eight looks of the challenge, including some separates and street clothes…

Le Manifeste
Have you ever thought about how your goals and dreams evolve over the years? How daily life and putting one foot in front of the other can cause you to lose sight of the ambitions and aspirations you once had for yourself. Every once in a while I like to get back in touch with my plans and hopes for myself to make sure that I haven’t gotten too far off track, and to see if I still want the things that I used to.
When I read Holly from Holly Would If She Could‘s inspirational Personal Mission Statement – influenced by Gala Darling‘s A Girl On A Mission post – I realized that doing something similar would be a great way for me to reevaluate my values and goals, and to regain some perspective on where I am in my life and where I want to get.
So in connection with my non-resolution resolutions – and with my hopes for 2012 in mind – I’d like to share my manifesto:
- I am at my best when: I’m content. When I accept my circumstances. When I’m at peace with myself.
- I am at my worst when: I give into stress, it takes me from a rational human being to a OCD nightmare who has to control everything around her.
- What do I really love to do in my personal life? Relax! My job is stressful so as soon as I step out the door I love that feeling of having the tension draining out of my body. I fill my weekends with anything calm and lazy. Movie nights, walks with beautiful views, foot massages, cooking, good wine, conversations and debates that last for hours, eating at great restaurants, shopping…
- My natural talents & gifts are: Organization & creativity are two of my most valuable skills.
- If I had unlimited time & resources & knew I could not fail, what would I choose to do? I would travel everywhere that I’ve ever wanted to go and go back to school. I would study journalism and psychology and get my PhD in Classical Civilizations. I’d learn Italian and French. I’d blog fulltime and actually go to the fashion shows and give you guys first hand photos and reviews. I’d finish the three novels that I’ve started writing.
- My life’s journey is: still a work in progress. Everyday I’m learning more about myself and my goals and what I want out of life, and each piece shapes my journey a little more.
- What would people say about you on your 80th birthday? She lived her life. She took chances and didn’t play it safe. She ate and drank and loved. They’d quote my favorite Thoreau saying from Dead Poets Society:
“I went into the woods because I wished to live deliberately… To put to rout all that was not life; and not, when I had come to die, discover that I had not lived.”
- What do I consider to be my biggest future contribution to the most important people in my life? I want to be a constant source of unwavering support and unbiased advice for my friends & family. I want to be a loving and affectionate aunt when my brother has kids. I want to continue being highly involved in the charitable organizations that I support.
- What are your values? I value love, generosity of spirit, and the courage to be honest with yourself and others.
- What is most important to you? The relationships that I have with family and friends, and passion. If I could pick a single word that holds the most importance for me it would be passion. I want to have passion for everything in my life, for every day, for every moment.
“Passion is the source of our finest moments; the joy of love, the clarity of hatred, the ecstasy of grief. It hurts sometimes more than we can bear. If we could live without passion maybe we’d know some kind of peace. But we would be hollow. Empty rooms, shuttered and dank. Without passion we’d be truly dead.”
- What are some goals you’d like to achieve this year? Per my non-resolution resolutions my major goals for 2012 are to buy & decorate a house in Sonoma and to publish a piece of my writing. From a self-growth standpoint I’d like to work on becoming a more positive individual and responding to life’s challenges with positive, constructive reactions.
- What kind of image do you hope to project? Is it similar or dissimilar to the image you’re projecting right now? I would like for those who meet me to come away thinking that I’m a straightforward, honest and genuine. I work
I have to admit that this was an interesting and cathartic process to go through. These are some meaningful and important topics that you may or may not have thought about before. I was an incredibly introspective individual growing up and through college I kept diaries, wrote daily and really thought about my life and my goals. Over the years as I got busier, life got harder and my responsibilities increased, and I stopped looking inward. This exercise really focused me on myself again and I highly, highly recommend giving it a stab.
I’m printing this out and adding it to my inspiration board to keep me motivated and positive. Tell me, what’s your personal mission?

What’s Cookin’ Good Lookin’
While I plan to share more of my eats and the dishes that I throw together on a regular basis soon, I’d also like to share with you some of the recipes that I’ve cooked and have been enjoyed by others recently.
I didn’t start cooking until a few years ago, and at that point I was already eating a mostly vegan and mostly gluten-free diet, so my cooking skills aren’t exactly what you’d call “well-rounded.” I’m really interested in expanding my repertoire though so using my very brave boyfriend and friends as guinea pigs, I’ve embarked on a mission to learn to cook meat.
Ek!
Recently the MCLV kitchen has made…
Turkey & Black Bean Chili from Eat, Live, Run (recipe here, picture above): My parents live in Albuquerque these days so I’ve learned to appreciate chilis and HOT food. I thought I may have overdone it with the spices in this dish, but since I came home to find the Tupperware container of leftovers completely empty I think it was a success after all… 🙂
Stuffed Chicken Breasts from The Fitnessista (recipe here, picture above): Two of the BF’s favorite things to eat are chicken and goat cheese so when I saw this recipe I KNEW it would be a hit. I wasn’t wrong. Another bonus of this one is that it’s incredibly easy and quick, with virtually no prep work.
Pumpkin Chili from The Life & Lessons of Rachel Wilkerson (recipe here, picture above): While I take the 5th on whether or not I made this chili in the buff – a la Rachel – I can tell you that it was quite the success. It has the perfect amount of pumpkin flavor without being too overwhelming, but was still hearty and wintry.
Coconut Chicken from Cooking Light (recipe here, picture above): Coconut anything (milk, flakes, water, oil, butter, flour…) is a major ingredient in my apartment these days and everyone I know loves it so when I read about Rachel’s experience with this recipe I decided to use it as inspiration and tweak it a bit. Rather than breading the chicken breasts with coconut flakes, egg, and flour, I decided to just use coconut flakes and coconut milk as a marinade w/ some serious chili sauce for the perfect kick.
Honey Spiced Chicken from Holly Would If She Could (recipe here, picture above): This is everything that I look for in a recipe – quick, easy & composed entirely of ingredients that I already have in my apartment! The verdict? Mikey likes it! 🙂
You may have noticed that I stole borrowed pictures from the recipe sites, well unfortunately my boyfriend seems to be in a constant state of starvation – I feed him, I swear – and tends to eat everything before I can get a picture of it. I’ll try to do better in the future, even if I have to invest in pepper spray!
Stay tuned for a new weekly MCLV segment on cooking and recipes – from Paleo-friendly eats to vegan, gluten-free and raw recipes. A little something for everyone.
